Ingredients:
- 2 ½ cups whole wheat flour (or oat flour for sensitive stomachs)
- ½ cup pure pumpkin puree (unsweetened)
- 2 tablespoons peanut butter (unsalted, xylitol-free)
- 2 eggs
Instructions:
- Preheat your oven to 175°C.
- In a mixing bowl, combine pumpkin, peanut butter, and eggs. Mix well.
- Gradually add flour until the dough forms a workable consistency.
- Roll out the dough on a floured surface and cut into festive shapes with cookie cutters.
- Place on a baking sheet lined with baking paper and bake for 20–25 minutes, or until firm.
- Let cool completely before serving.
