Ingredients:
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 cup unsweetened applesauce
- 1/4 cup grated apple (peeled)
- 1 egg
- 2 tablespoons coconut oil
Instructions:
- Preheat oven to 175°C and line a mini muffin tin with liners.
- In a bowl, mix the flour, baking powder, and cinnamon.
- In another bowl, whisk together applesauce, grated apple, egg, and coconut oil.
- Combine the wet and dry ingredients, mixing until smooth.
- Spoon the batter into the muffin liners, filling each about ¾ full.
- Bake for 15–18 minutes or until a toothpick inserted in the centre comes out clean.
- Cool completely before serving.
